Are you entertaining this weekend or perhaps going to a family or friend’s house party? Today, I’m sharing two delicious recipes that are guaranteed to be a hit with the crowd!
A couple of weekends ago, Vince informed me on Friday morning that about 10 of his co-fellows were coming over THAT evening for appetizers and drinks. Fortunately, the boys were in school and I only had Rose with me…cleaning and organizing a gathering is way easier with one child! So off to the grocery store we went. I started with my go-to appetizers: boursin cheese, pita chips, Chex mix (mainly for the kids), and bell peppers with a side of ranch dressing. I then decided to try something new…avocado toast bites! They were very easy to make and everyone loved them.
Avocado Toast Bites
(Serves approximately 20 bites and all products are linked via Target with Same Day Delivery)
Ingredients
4-5 Avocados
3-4 Tomatoes
Instruction
Slice the baguette into approximately 20 pieces
Smash and mix avocados in a large bowl – set aside
Toast baguette bites in oven or toaster oven
Add mayonnaise to toasted baguette bites
Add avocado to toasted baguette bites on top of mayonnaise
Slice tomatoes into triangles
Top baguette bites with tomatoes
Add a dash of salt and pepper
Place on a large platter for all to enjoy!
As you know, Vince enjoys coming up with new mixes for his cocktails and this evening was no different. The cocktail was refreshing and the perfect end of summer drink.
Last Days of Summer
“A choose your own adventure cocktail…gin or vodka”
Ingredients
2 Oz. Tanqueray Gin or Deep Eddy Ruby Red Grapefruit Vodka
0.5 Oz. Lime Juice
3-4 Sprigs of Mint
0.75 Oz. Grapefruit Juice
Float of Prosecco
Instructions
In a shaker, add lime juice and muddle with mint
Add ice and combine with Gin or Vodka (depending on choice), in addition to grapefruit juice
Shake until chilled
Strain into highball glass with fresh ice
Top with a float of Prosecco and garnish with a slice of grapefruit and sprig of mint

The night was a blast! We ate, drank, and after the kids went to bed, we played a hilarious game…Drawing without Dignity. The house was filled with laughter and great friends.
