A Tasty Treat!

I enjoy cooking (when I have the time) but I prefer to bake! It puts me right in that cozy fall and winter mood; the house warm from the oven and the smell of sweetness in the air! That’s why I was so excited when I realized I had 3 very ripe bananas…Banana Bread time!

Now, I originally wasn’t going to share this with you as two major issues happened when baking this delicious treat (which I’ll share in a bit). However, I realized that’s life and it isn’t perfect. I’m NOT Martha Stewart and it’s ok if things aren’t pretty.

So my first mistake…

The kids love to ” help” when baking; especially pouring the items in the bowl. We compromised and I said they could pour the chocolate chips in and mix it at the end. Me, not paying attention to the recipe, opened the bag for them and said “ok you each get to pour half in the bowl.” We mixed it up, put it in the oven and set the timer. After realizing my second mistake, I noticed the middle wasn’t cooking as well. Then I read the recipe…it was supposed to ONLY be 1 CUP of chocolate chips and NOT the entire bag!

Second mistake….

We’ve only been in the house for a couple months and I really didn’t pay attention to the placement of the oven racks when cooking (rookie mistake). I simply placed the loaf in the oven, set the timer, played with the kids and ten minutes before it was done, went to check on it. I looked in the oven and literally felt deflated! My pretty banana bread was pushed up under the top rack and was stuck! My only option was to pull it out of the oven and destroy the pretty top of the golden loaf of bread.

Since I had royally destroyed this tasty treat, I was going to scratch this idea and share something else with you. But I realized, it still tasted delicious! The house was warm from the oven, it smelled like heaven and was extra chocolatey LOL. So here is my grandma’s Banana Bread recipe…give it a try and only do 1 cup of chocolate chips!

Ingredients

2 Cups Flour

1 tsp Baking Soda

1/2 tsp Salt

1/2 tsp Vanilla Extract

1/2 Cup Butter

1 Cup Sugar

2 Eggs

3 Ripe Bananas

1 Cup Chocolate Chips

Instructions

Preheat oven to 350 degrees

Sift together flour, baking soda, salt and set aside.

Beat together butter, sugar, and vanilla extract.

Add eggs (one at a time) to butter mixture.

Mash bananas and add to butter mixture. Continue to beat well.

Slowly add flour mixture and beat well.

Once smooth, add chocolate chips and mix.

Grease loaf pan.

Pour mixture into pan and even out in the pan.

Bake for 60 minutes.
