It’s FriYAY!

I have to say it has been one of the craziest months of my life!  To fill you in, we sold our house in Chapel Hill, NC in the first week of June, lived in a hotel for 8 days (with all three children) while Vince finished up his last week at UNC, drove from NC to TX in 3 days, closed on our house last Friday (the same day as our PODS and furniture were delivered), moved into the house at 7pm that night, and subsequently have been relentlessly unpacking ever since!

Now one week post-voyage, I have successfully unpacked the kitchen, kid’s rooms, bathrooms, master bedroom, and master bathroom.  While it feels like I’ve finished a lot, I still have an insane list of things to do, unpack, and organize!  Amidst all of this madness, we are loving the new house and the layout is perfect for our family.  For the first time, our kids have a playroom (amen)!  They love having their own space and I love having my “adult” tv room.  However, I do have to say, there’s nothing better than hearing the giggles and chatter from the neighboring room.  Also for the first time, we have an office, which will gives Vince a place to study and me a place to write.  I think we’re both looking forward to having the little retreat (even though it might be for work).  Once each room is complete,  I’ll be sure to share it and all of my great finds with you.

With all of that said…yay for Friday!  Vince kicked it off right and made a delicious cocktail called “She earned it”!  It’s refreshing, yet not too sweet. I highly recommend trying it yourself!

Ingredients…

Juice from 1 lime

5 raspberries

Simple Syrup

Ice

1.5 Oz Bacardi Raspberry Rum

0.75 Oz Cointreau

Champagne

Instructions…

Muddle 5 raspberries with simple syrup and lime juice

Add Ice, Rum and Cointreau

Stir then strain over ice into rocks glass

Top with Champagne

Garnish with a raspberry and lime wedge
